I don’t usually like gluten free cake mixes.  I find that most of them are disappointing. Having said that, I am consistently pleased with King Arthur gluten-free flour, so I thought I would try their Gingerbread mix.  You can also make cookies with it.

This is really easy to make.  You only need to add a few ingredients:

1/2 cup melted butter or 1/4 cup vegetable oil

1 teaspoon baking powder

3 large eggs

1/2 cup water

1 cup dry fruit such as raisins

Empty dry mix into a medium bowl.  Whisk in baking powder.  Whisk together eggs, oil and water in a 2 cup measuring cup.  Stir wet ingredients into dry until incorporated.  Stir in raisins.  Pour batter into a greased 8×8 square pan.  Let stand for 10 minutes.

Bake at 350 degrees for 28-32 minutes, or until middle is set and sides begin to pull away from the pan.

Let cool on a rack before cutting into squares.

The gingerbread baked up moist and high. You can really taste the ginger and molasses.  I would definitely recommend you try this.
